Recipe: Italian Penne Pasta with Sundried Tomatoes and Basil

Serves: 6


  1. 2tbsp Olive Oil
  2. 2 Garlic Cloves, crushed
  3. 6 Sundried Tomato Halves
  4. 1 Red Pepper, chopped
  5. Handful of Kalamata Olives
  6. 1tsp Mixed Herbs
  7. 1 Can of Chopped Tomatoes
  8. 1tbsp Tomato Puree
  9. 1tbsp Balsamic Vinegar
  10. 1tbsp Agave Syrup
  11. Salt and pepper to taste
  12. 500g Spelt Penne Pasta


  1. Add the olive oil to a large saucepan and fry the onion and garlic until golden.
  2. Add in the sundried tomatoes, pepper and herbs. Saute for 10 minutes.
  3. Pour in the chopped tomatoes and tomato puree. Stir until combined. Add the vinegar and agave syrup.
  4. Season with salt and pepper to taste.
  5. Simmer at low temperature for 5-10 minutes to allow flavours to combine.
  6. Meanwhile, cook the pasta following the packet directions. Drain and add to the sauce.
  7. Serve with fresh basil.
